Sugar-Free Cup Cakes by Balanced Being

The lovely Natalie from Balanced Being has made our Cake Mix into gorgeous chocolate cupcakes with healthy coconut oil, and topped them with yummy icings, sweetening cream cheese with Sukrin Icing, then adding either cocoa or our Peanut Flour to flavour. Yummy! Read her review here 

Instructions
 

  • Preheat the oven to 350f/180c/GM5. 

  • Mix all the ingredients with the cake mix and whisk until the batter is smooth.

  • Pour into cupcake liners in a muffin tin and bake for approx. 20-25 mins.

  • Cool in the tin for a few minutes before removing and placing on a wire rack to cool.

  • For the icing, mix the cream cheese with the Sukrin Icing and Peanut Flour, swirl onto the cakes and enjoy.

 

Ingredients

1 packet Sukrin cake mix
3 Eggs or equivalent in egg replacer
150 ml Water
75ml Oil (coconut or oil of your choice)
1 pack cream cheese
1 tblsp Sukrin Icing
1 tblsp Sukrin Peanut flour
