Low carb pizza, gluten free with Sukrin Bread Mix

Sukrin bread mix makes a marvellous gluten and yeast free pizza base, tasty and filling. Natalie from Balanced Being has made a scrummy sugar-free onion marmalade with Sukrin Gold to accompany her goats cheese, spinach and pine nut topped version. 

 

Instructions

  • Make up the bread mix as per the packet instructions and roll out into a pizza base
     

  • Bake at 180 degrees (gas mark 4) for 1 hour or until the top has a light golden colour

Chili jam

  • Slice the red onion and fry in the coconut oil on a low heat until the onion starts to caramelize.
     

  • Add in the Sukrin Gold (Stockist here) and mixed spice until the jam starts to bubble
     

  • Transfer into a bowl and set aside

Pizza topping

  • In a new pan, toast the pine nuts on a low heat until lightly coloured – set aside
     

  • Grate the cheese
     

  • Once the pizza have baked for the initial hour it’s time to decorate!
     

  • Spread out half of the chili jam on the pizza
     

  • Layer the spinach
     

  • Sprinkle over the grated cheese
     

  • Finally add half the Pine nuts to each pizza and sprinkle the chia seeds

 

Ingredients

For the chili jam:

1 red onion chopped finely
1 tablespoon of Sukrin Gold
1 teaspoon of 100% Virgin coconut oil
Small pinch of mixed spice

For the pizza base:

1 pack of Sukrin Bread Mix
250ml Water (follow the pack instructions)

For the topping:

2 oz of hard goats cheese now available in most supermarkets, or normal goats cheese you prefer
A handful of spinach
A handful of pine nuts (toasted)
1 teaspoon of Chia seeds per pizza
