Vegan Chocolate Fudge Brownie with Sukrin Gold and Sukrin Coconut Flour

Try these unusual brownies, made with black beans, and full of raw goodies. Perfect for lunch boxes, they will give you a sweet sustaining boost any time of day, without a sugar spike. If you don´t have whey protein powder, you can add almond flour instead. Thank you ladies from the 'I am into this' blog for a gorgeous recipe.

 

Instructions

  • In a high-powered blender, blitz together the beans, whey protein, sugar, cacao, coconut flour and vanilla until smooth. Give it a taste to see if it's sweet enough, and add a touch more sweetener if not.
     

  • Shape the mixture into protein bars (if it's a little sticky still, add a touch more coconut flour. Too dry and add some honey or melted coconut oil), then place in the fridge for a few hours to firm up.
     

  • Once the bars are set, gently melt together the dark chocolate with the coconut oil. Coat each of your bars, then leave to set once more before indulging and enjoying!

1/2 can drained black beans
2 scoops chocolate whey protein powder
1/2 cup Sukrin Gold 
1/2 cup Creative Nature cacao
1/3 cup Sukrin Coconut Flour 
1 tsp vanilla extract or Capella's chocolate fudge brownie drops
100g 85% dark chocolate
1 tbsp Lucy Bee coconut oil
