Mexican Pork with Coconut Flour Tacos

Sukrin Coconut flour makes fabulous wheat and grain free tacos and tortillas. The tapioca flour makes them lovely and pliable. Use for breakfast, filled with scrambled eggs, avocado and chilli Mexican style, or as we have here with this lovely slow cooked pork adapted from the Wahaca cookbook, pink pickled onions, guacamole and Greek yoghurt.
