Try switching dairy milk for almond or coconut, using melted coconut oil or avocado oil, or replacing the flour with the gluten-free flour of your choice. Delicious with added fruit or nuts; try a teaspoon of your favourite spice - nutmeg, ground cardamon and cinnamon all work really well.
Preheat oven to 200C/400F/GM6. Line a 12 hole muffin tray. Beat together the eggs, oil and milk.
Add Sukrin Gold until dissolved. Sift in the flour. Add nuts, dried fruit or chocolate chips if desired. Fill the cases 2/3 full. Bake for 25 mins. Serve warm or cold.
