Sukrin Sugar-Free American Apple Pie, low-carb with Sukrin:1
Sukrin is perfect used in sweet pastry instead of sugar, and also to sweeten fruit, so is great in things like dessert pies and crumbles. Just use one of the Sukrin sweeteners in place of the sugar in your normal recipe. Try Sukrin Icing, our replacement for icing sugar, in your pastry, instead of the Sukrin:1 we have used here.
Prep time: 45 min Cook time: 40 min. Yield: 6 servings
- 500g Plain flour
- 2 tbsp Sukrin:1
- 1 tsp Salt
- 220g Butter
- 5-6 tbsp Water
- 6 Apples
- 100g Sukrin Gold
- 1 Lemon
- 1/2 tsp Nutmeg grated
- 1/2 tsp Cinnamon
- 1 tsp Corn flour
- 50g Raisins
- Pastry: Place flour, the two tablespoons of Sukrin:1 and salt in a bowl. Crumble in 200g of the butter until the mixture resembles fine breadcrumbs. Add in enough water to bind, and knead gently to bring together. Divide dough in half and roll out each half, on a floured surface, into two 20cm circles. Use one half to line a 20cm pie dish and place the other circle on a plate for use as a top for your pie.
- Cover the pie dish and plate with clingfilm and put them in the refrigerator for at least an hour. Preheat the oven to 200c GM8. Line the pie dish containing the pastry with baking paper, fill well with baking beans and bake blind for 10-15 minutes. Remove the paper and bake for a further 5 minutes until golden. Turn the oven down to 175c/325f/GM3.
- Filling: Peel, core and dice the apples. Place the prepared apples in a bowl and squeeze over the lemon juice. Stir together the Sukrin Gold, the nutmeg, cinnamon, the raisins and cornstarch in a bowl and sprinkle over the apples. Give everything a good stir. Spread the apples into the baked pie case, and dot over the butter. Place the rest of the pastry on top and brush with a little milk or beaten egg. Bake in the oven for about 40 minutes, until golden and the apples feel cooked. Sprinkle generously with Sukrin Gold.
