Paleo Courgettes with Cumin and Coconut Flour
We served ours as a side vegetable with some grilled chicken, but they are equally lovely with a garlic mayo dip served as a snack or starter. You can use coconut flour in place of breadcrumbs both in coatings and stuffings.
Mix the flour, cumin and salt on a plate. Whisk the egg. Melt 2 tsp coconut oil in a medium sized frying pan.
Toss the courgettes, a few a a time, in the flour mixture. Dip one by one in the beaten egg, and fry until they are golden brown and the courgette soft. Serve at once.
