Sugar and Gluten-Free Cake Mix

This free-from versatile cake mix helps you make your favourite cakes without sugar and flour. Using our mix as a base, it’s simple to make cakes for everyone to enjoy with a clear conscience. The mix contains almond flour and Fibrefine instead of wheat flour, and we have replaced the sugar with Sukrin. The result is a delicious and tasty cake that’s big in flavour but small on the ingredients you want to avoid!

You can create a variety of delicious, moist cakes from one easy mix! Use it as it is, or as a base to make your own creation. Why not try carrot cake, apple cake, lemon drizzle cake or chocolate cake? The mix is simple to use and provides a gorgeously rich tasting cake.

Look at the nutritional content of our cake mix compared to the average of six similar cake mixes on the market:


  • Preheat oven to 180ºc (Gas Mark 4).
  • Mix 4 large eggs (or your choice of egg replacer), 200ml water and 100ml oil together in a large bowl.
  • Add the cake mix and whisk until the batter is smooth. Add your chosen flavouring, or use just as it is, then pour into a greased and lined 9-10 inch (24cm) round cake tin or in a cupcake pan lined with muffin cases (10-12 cupcakes). One packet bakes an 800g cake, and serves 10-12.
  • Large Cake: Bake for 30-40 mins
  • Cupcakes: Bake for 20-25 mins.

About the ingredients

Low-fat almond flour

Finely-ground almonds where much of the oil is removed by cold-pressing.


Fiberfine is natural, gluten-free flour containing 60%  resistant starch. Fiberfine has a beneficial effect on digestion, bacterial flora and immune system. Read more about Fiberfine here.

Potato starch

Starch from potato that makes the cake moist and keeps it soft.


Sukrin Granulated Low Carb Sweetener is purely made from the natural polyol erythritol derived from GM-Free corn starch. It contains no artificial colours, additives or preservatives, and is naturally gluten free. It contains no carbs, no calories and is non-glycemic. Read more about Sukrin here.


Sucralose is a sweetener , about 600 times sweeter than sugar, and it is used in a very small amount to enhance the sweet taste of Sukrin.

Fibre from chicory and psyllium husk

Plant fibres are used to provide the proper consistency and to increase the fibre content.

Pea protein

Complete vegetable protein from peas.

Raising agents

Bicarbonate and disodium phosphate are the ingredients of regular baking powder.


Ordinary table salt (sodium chloride).


Mono and diglycerides of fatty acids. Used to bind water and fat and to give the cake a nice crust and firm consistency. The fat is only from vegetable sources.



Acidity regulator

Citric acid. Acts as an acidity regulator, and also controls the raising of the cake.

What is Sukrin?

What is Sukrin Fibrefine?

Gluten-Free Fibrefine finely ground flour is a naturally fibre-rich, gluten-free, low-fat, and free-from flour substitute and a healthy supplement. Contains 60% pure fibre. Sukrin Fibrefine is non-glycemic.

Sukrin Fibrefine contains 60% of a beneficial all-natural fibre called resistant starch which keeps blood sugar levels stable and protects the digestive system.

To use as a supplement, simply whizz a tablespoon or two into your shakes or smoothies, or stir into porridge, soups or stews.

Sukrin Fibrefine fibre rich white flour is made from a special type of non-GMO corn grown in Australia.

Use to make your baking healthier, substituting some of your usual flour. Has a binding effect that makes gluten-free baking less crumbly.

What is resistant starch?

Resistant starch passes all the way through the small intestine without being digested, thus acting like fibre, sweeping the digestive system. When it reaches the colon it’s used by the bacteria there as fuel, producing a healthy type of fat, which protects colon cells, promoting good bacteria and suppressing bad. It helps with bowel regularity and causes less storage of fat in the body from food. Resistant starch is a great addition to the diabetic diet as not only does it improve insulin sensitivity, there is improved tolerance of insulin the next day. Resistant starch can help greatly with mineral absorption, especially calcium and magnesium.

Is there anything that I can replace the oil in the recipe with to lower the fat content?

The oil can be replaced, or part replaced, with creme fraiche, sour cream or Quark or for a non dairy alternative, soya or coconut yoghurt (made with coconut milk, not coconut flavoured)

The cake mix doesn`t contain regular flour, so what is it made from?

The main flour in Sukrin cake mix is delicious, nutritious, almond flour, together with some naturally gluten-free corn flour. It also contains beneficial fibre in the form of psyllium and chicory, some Fibrefine resistant starch, and Sukrin Granulated to sweeten.

How do I use egg replacer to make the cakes instead of eggs?

Simply make up the egg replacer as per pack instructions, and add to the cake mix as you would eggs.

What size tin do I need to bake it in?

We recommend you use a 24cm round tin for your cake, but you could also make a square cake, a loaf cake or cupcakes, it`s up to you!

What are the net carbs of Sukrin cake?

Sukrin cake has a total net carb content of 19.8 grams per 100g of cooked product.

Can I freeze my baked cake?

Sukrin cake freezes really well. Defrost for 3-4 hours at room temperature, or overnight in the fridge.

How long do Sukrin cakes last once they are baked?

Sukrin cake will stay fresh, well wrapped in the fridge, for 4 to 5 days.

Does Sukrin cake contain any allergens?

Sukrin cake contains sesame flour.

Is Sukrin Cake suitable for vegans and vegetarians?

Sukrin cake mix is vegan, so if it is made up with egg replacer, the final baked cake will be vegan. When made with eggs, it is suitable for vegetarians. The cake mix is approved by the Vegetarian Society.

Different from a standard cake but tasty!

Sukrin Cake Mix
It was more dense and I baked it for 45 min instead of 30 min. I added total 2% yogurt instead of quark and only 2 tbsp of margarine plus some vanilla and 1 tsp baking soda. I was very happy with the result.
