Sukrin Sugar-free Carrot Cake, yeast, dairy and gluten-free with Sukrin Baking Mix
A really easy, quick carrot cake recipe using Sukrin baking mix. Add whatever spices you like, we added cinnamon to ours. You could add a handful of sultanas or raisins, chopped walnuts work well too. Top with some cream cheese simply sweetened with Sukrin Icing, for a decadent low-carb topping.
Preheat the oven to 180C. Grease and line a 20cm cake tin.
Mix all the ingredients with the cake mix and whisk until the batter is smooth.
Pour into cake tin and bake for approx. 30 mins.
Cool in the tin for a few minutes before removing from the tin and placing on a wire rack to cool.
• 1 pack of Sukrin Baking Mix
• 150ml water
• 4 Eggs or *egg replacer
• 100ml Oil
• 3 teaspoon Cinnamon
• 200g Carrot, grated
• 1 teaspoon Baking soda
