Sukrin Sugar-free Coconut Cake, yeast, dairy, gluten and wheat-free with Sukrin Baking Mix
Sukrin low-carb gluten-free baking mix is delicious with the addition of some desiccated coconut and cinnamon. We topped ours here with buttercream made with Sukrin Icing, but it's lush just on it's own. You could try adding some chopped pineapple to the cake mix too, and topping with lime flavoured cream sweetened with Sukrin Icing, drizzled with passionfruit.
Preheat the oven to 180C. Grease and line a 20cm cake tin.
Mix all the ingredients with the cake mix and whisk until the batter is smooth.
Pour into cake tin and bake for approx. 30 mins.
Cool in the tin for a few minutes before removing from the tin and placing on a wire rack to cool.

• 150ml water
• 4 Eggs or *egg replacer
• 100ml Oil
• 50g Desiccated coconut
• 1/2 tsp cinnamon
