Gluten and Sugar-Free Lemon Cake with Sukrin Baking Mix
You can really have fun with this zesty recipe - bake in a giant cupcake mould and fill with sugar-free lemon curd and whipped cream with a dusting of Sukrin Icing. You could even make cupcakes and bars following the same recipe - Sukrin Baking Mix bakes well in all kinds of cake tins.
• 1 pack of Sukrin Baking Mix
• 150ml water
• 4 Eggs or *egg replacer
• 100ml Oil
• 1 lemon, juice and zest
Preheat the oven to 180C. Grease and line a 20cm cake tin.
Mix all the ingredients with the cake mix and whisk until the batter is smooth.
Pour into cake tin and bake for approx. 30 mins.
Cool in the tin for a few minutes before removing and placing on a wire rack to cool.
