Vegan & Sugar-Free Chocolate Chip Cookies with Sukrin Chia Flour

Delicious homemade vegan and sugar-free chocolate chip cookies thanks to Sukrin Chia flour and the sweeteners Sukrin Gold and Sukrin :1. In this recipe, the chocolate can be replaces with raisins or nuts for a change. Great when you simply 'need something sweet'! Sukrin Chia flour is a wonderful high protein flour that can be used as egg replacer in a lot of baking recipes.

Ingredients

80g plain flour (gluten-free)
80g Sukrin Almond Flour
3 tbsp Sukrin Chia Flour
9 tbsp water
60g Sukrin :1
60g Sukrin Gold
120g softened butter
1/2 tsp backing soda
1 tsp vanilla extract
80g chocolate chips
pince of salt

Instructions

  • Preheat the oven GM5/ 375F/ 190C.

  • Prepare the Chia eggs by mixing water with the Sukrin Chia Flour. Mix it well and put it in the fridge for around 10 minutes.

  • Combinate the softened butter, Sukrin :1,
    Sukrin Gold and vanilla extract in a large
    bowl. 

  • In another bowl mix the Sukrin Almond flour,
    plain flour, baking soda and salt. Add this
    mixture into the wet mixture, and add the
    Chia eggs. Mix until it begins to form a dough. 
    Stir the chocolate chips. 

  • Divide the dough into little pieces. Bake for
    10-12 minutes until golden brown. Allow
    to cool before serving.
